研究等离子体活化水冰(PAW-ice)对纯培养以及人工接种于三文鱼片表面单增李斯特菌的杀菌效果,并通过发射光谱检测等离子体中主要活性物质,测定PAW-ice氧化还原电位、p H值和电导率,同时检测染菌三文鱼片在贮藏过程中总挥发性盐基氮(TVB-N)含量和p H值的变化.结果显示:与无菌水冰(sterile water-ice,SW-ice)相比,PAW-ice对单增李斯特菌纯培养杀菌效果显著,可以使细菌降低1~3个lg CFU/mL值,杀菌效率取决于PAW制备时间、制备体积以及PAW-ice处理时间;此外,在4℃贮藏5天过程中,与SW-ice相比,PAW-ice可以有效抑制染菌三文鱼片表面单增李斯特菌生长并减缓三文鱼片TVB-N值和p H值上升.此结果表明PAW-ice对三文鱼片表面单增李斯特菌的控制具有良好应用前景.
Abstract:The potential of PAW-ice for the inactivation of Listeria monocytogenes in pure culture or artificially inoculated on salmon strips was firstly presented. Meanwhile,the main active substances in the plasma were detected by optical emission spectroscopy,and the oxidation-reduction potential( ORP),pH value and electrical conductivity were also determined. Moreover,the effects of PAW-ice on the total volatile basic nitrogen( TVB-N) and pH of salmon strips were determined. The results showed that,compared with sterile water-ice,PAW-ice had a remarkable effect on the pure culture of L. monocytogenes,which could reduce the bacteria by 1 ~ 3 lg CFU/mL,and the sterilization efficiency depended on the PAW's preparation time,volume and PAW-ice processing time. In addition,during storage at 4 ℃ for 5 days,compared with sterile water-ice,PAW-ice could inhibit the growth of L.monocytogenes on the surface of salmon strips and slow down the increase of TVB-N and pH value. Thus,PAW-ice had a good prospect in controlling L.monocytogenes on the surface of salmon strips.
